Giant Red Shrimp classification: Arthropoda (phylum), Crustacea (subphylum) and Aristeidae (family).

The giant red shrimp, Aristaeomorpha foliacea together with the blue and red shrimp Aristeus antennatus, are only species of the family Aristeidae found in Mediterranean. The species is a large sized shrimp with a light and flexible red colour exoskeleton and black eyes. In mature females the dorsal part of the abdomen is darker due to the black colour of the mature ovaries.

The giant red shrimp has a wide geographic distribution. The species has been reported to occur in the Mediterranean, the Atlantic, the Indian Ocean, the western Pacific and South Africa. In the Mediterranean Sea the distribution of the species is patchy in nature, with the highest abundances found in the central-eastern basins.

Aristaeomorpha foliacea is a deep-water benthopelagic shrimp with a reported depth distribution of 120-1300 m, generally on muddy bottoms. The species aggregates in submarine trenches and canyons along the continental slope and peaks in abundance at 300-800 m depths.

The maximum body length of females according to the FAO guides is 225 mm (59 mm carapace length) and that of males 170 mm (45 mm carapace length). Common body lengths for females measure 170-200 mm and males 130-140 mm.

After several studies it has been estimated that giant red shrimp lives a maximum age of 4 years for female and 5 years for male.

The species is caught in out nets throughout the year, in quantities and sizes that vary depending on the fishing area, the fishing depth and the time of the year. The product is available in two conditions: fresh and as an Aegean Harvest brand (frozen-on-board).
